Orzo with Prawn & Chorizo Skewers

This is definitely a mid-week dinner that is fast but impressive. But then I'm always impressed by food on a skewer. The herbs and lemon adds a perfect zing for the pasta. Although there is a lot of herbs which resembles a tabbouleh, it does really work. Give it a go you will love it.

Lets go...

Fry a large chopped onion, garlic and add the orzo

Add a pinch of saffron to stock

Add the stock to the orzo and let it cook down in the oven

Meanwhile make the skewers with the prawn and chorizo

Dry fry the skewers a few minutes on each side to caramelise

Add the herbs, lemon zest and lemon juice to the cooked orzo

Serve with the skewers ...yum
Ingredients:
1 onion, finely chopped
2 cloves of garlic minced
2 tbsp olive oil
200g of orzo pasta
1 litre chicken stock
1 bunch of fresh parsley
1 bunch of fresh coriander
pinch of saffron
36 king prawns
chorizo sausage cut into 1 inch rounds
zest and juice of 1 lemon
Method:
1. Preheat the oven to 180°C, gas mark 4. Heat the olive oil in a large saucepan and gently cook the onion and garlic until softened but not coloured. 2. Add the orzo to the onion and garlic and make sure the onion mixture coats the pasta. Add a pinch of saffron to the stock and then add the stock to the orzo. Place in oven to bake for 20 minutes but stir halfway through cooking time. 3. Meanwhile, make the skewers. I used 3 prawns per skewer and placed the chorizo in the middle of the prawn and threaded the skewer through it. Made 12 skewers in total but its completely up to you how many you fancy making. I dry fried them in a pan a few minutes on each side as the chorizo releases a lot of natural fat so doesn't need any more oil. The prawns and chorizo should be nicely caramelised so make sure you use the cooking chorizo and not the pre-cooked variety.
4. Once pasta is cooked it should still be lightly moist with stock so not dried out and overcooked. Add the parsley and coriander. Zest the lemon and add the lemon juice. Serve with the skewers. Delicious
